Description

Deliciously rich and chewy vegan chocolate chip blondies made with vegan butter, brown sugar, and dairy-free ingredients. These blondies offer a perfect balance of sweetness and texture, with melty chocolate chips folded throughout, and are perfect for a plant-based treat that everyone will enjoy.

Ingredients

Blondie Batter

  • 1/2 cup vegan butter, slightly softened (112g)
  • 2/3 cup light brown sugar, packed (142g)
  • 1/2 cup granulated sugar (96g)
  • 1/4 cup non-dairy milk
  • 1 tbsp vanilla flavoring
  • 2 cups all-purpose flour (272g) (gluten-free if needed)
  • 1 and 1/2 tsp cornstarch
  • 1/2 tsp baking powder
  • 3/4 tsp salt
  • 1 cup chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit and line an 8×8-inch square baking dish with parchment paper, leaving some paper hanging over the edges for easy removal later.
  2. Cream Butter and Sugars: In a large bowl, combine the vegan butter, light brown sugar, and granulated sugar. Using a stand mixer or electric handheld mixer, cream the ingredients together for 2-3 minutes until the mixture is light and fluffy.
  3. Add Wet Ingredients: To the creamed butter and sugars, add the non-dairy milk and vanilla extract. Continue mixing until everything is well combined and smooth.
  4. Mix Dry Ingredients: In the same bowl, add the all-purpose flour, cornstarch, baking powder, and salt. Mix the dry ingredients into the wet until just combined and the flour is fully incorporated.
  5. Fold in Chocolate Chips: Gently fold the chocolate chips into the batter with a spatula ensuring even distribution.
  6. Transfer to Baking Dish: Transfer the blondie batter into the prepared baking dish. Press the mixture evenly and firmly against the bottom using clean hands or a rubber spatula.
  7. Bake: Bake in the preheated oven for 30-35 minutes, or until the edges turn a light golden brown and a toothpick inserted near the center comes out with a few moist crumbs but no raw batter.
  8. Cool and Slice: Remove the baking dish from the oven and allow the blondies to cool completely in the pan. Once cooled, use the parchment paper to lift the blondies out, place on a cutting board, and slice into 16 equal bars.
  9. Serve: Enjoy your vegan chocolate chip blondies as a delightful snack or dessert.

Notes

  • For gluten-free option, substitute all-purpose flour with a gluten-free flour blend with xanthan gum included.
  • Ensure vegan butter is softened but not melted for best creaming results.
  • Use dairy-free chocolate chips to keep the recipe fully vegan.
  • Do not overbake to maintain a chewy texture; blondies will continue to set as they cool.
  • Leftover blondies can be stored in an airtight container at room temperature for up to 3 days or refrigerated for one week.
