Ingredients
Dry Ingredients
- 3 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1 tsp ground cinnamon
Wet Ingredients
- 1 cup vegetable oil
- 1 3/4 cups granulated sugar
- 3 eggs
- 1 tsp vanilla bean paste
- 2 15-oz cans diced peaches in juice, drained (or about 2 1/2 cups fresh peeled and chopped peaches)
Glaze
- 1 cup powdered sugar
- 2-4 tablespoons reserved peach juice or milk
Instructions
- Preheat and Prepare Pans: Preheat the oven to 350°F and grease two 8×4-inch loaf pans to prevent sticking during baking.
- Drain Peaches: If using canned peaches, drain the juice, reserving it for the glaze if desired.
- Mix Dry Ingredients: In a mixing bowl, whisk together flour, baking soda, baking powder, salt, and ground cinnamon until fully combined. Set aside.
- Cream Oil and Sugar: In the bowl of a stand mixer fitted with a paddle attachment or a large mixing bowl, beat vegetable oil and granulated sugar together on medium speed until well combined.
- Add Eggs: Reduce mixer speed to low and add eggs one at a time, mixing thoroughly after each addition to ensure a smooth batter.
- Add Vanilla and Peaches: Mix in the vanilla bean paste and diced peaches, combining gently but thoroughly.
- Combine Wet and Dry Ingredients: With the mixer on low speed, gradually add the dry flour mixture to the wet ingredients, mixing just until incorporated. Scrape down sides of the bowl as needed to ensure even mixing.
- Fill Pans and Bake: Divide the batter evenly between the prepared loaf pans. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool Bread: Remove the bread from the oven and let it cool in the pans for about 10 minutes, then invert onto a cooling rack or serving plate to cool completely.
- Prepare and Apply Glaze: Once the bread is cooled, prepare the glaze by whisking powdered sugar with 2 tablespoons of reserved peach juice or milk in a small bowl. Adjust thickness by adding more juice or milk a teaspoon at a time. Drizzle the glaze over the bread and allow it to set for about 10 minutes.
Notes
- Using fresh peaches instead of canned will enhance flavor and texture.
- The peach juice reserved from the canned peaches is key for a flavorful glaze but can be substituted with milk if unavailable.
- Do not overmix the batter when adding flour to keep the bread tender.
- Check doneness by inserting a toothpick in the center; it should come out clean or with just a few moist crumbs.
- This bread freezes well; slice and freeze for quick future treats.
