Ingredients
Wet Ingredients
- 1 cup unsalted butter (226 grams), melted and cooled
- 2 large eggs
- 2 teaspoons vanilla bean paste
Dry Ingredients
- 1 cup light brown sugar (210 grams)
- 3/4 cup granulated sugar (150 grams)
- 2 cups + 2 tablespoons all-purpose flour (266 grams)
- 1 tablespoon cornstarch
- 1/2 teaspoon salt
Mix-ins
- 1 1/2 cups chocolate chips (270 grams) or preferred mix-ins
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line a 9×13 inch (23×33 cm) baking pan with parchment paper or aluminum foil, leaving an overhang on the sides for easy removal, or lightly grease the pan if preferred.
- Mix Butter and Sugars: In a large bowl, whisk together the melted and cooled butter with the light brown sugar and granulated sugar until combined and smooth.
- Add Eggs and Vanilla: Whisk in the eggs and vanilla bean paste, ensuring the mixture is smooth and the butter is well incorporated without separating.
- Add Dry Ingredients: Stir in the all-purpose flour, cornstarch, and salt, mixing until no flour clumps remain and the batter is uniform.
- Fold in Chocolate Chips: Carefully fold the chocolate chips or your chosen mix-ins evenly into the batter.
- Transfer and Smooth Batter: Spoon the batter into the prepared baking pan and smooth the top with a spatula for even baking.
- Bake Blondies: Bake in the preheated oven for 24 to 28 minutes, or until the top is set and shiny, and a toothpick inserted in the center comes out clean or with a few moist crumbs.
- Cool and Slice: Remove from oven and let cool completely. Using the parchment or foil overhang, lift the blondies from the pan and place on a cutting board. If parchment was not used, slice directly in the pan. For neat cuts, ensure the blondies are fully cooled, about 2 hours, even if the chocolate chips remain slightly melty.
Notes
- For easy removal, always line your pan with parchment paper or foil with overhang.
- Do not overbake to keep blondies chewy and moist.
- You can customize mix-ins with nuts, white chocolate, or dried fruit.
- Ensure butter is cooled before mixing with eggs to prevent curdling.
- Allow blondies to cool fully for clean slicing and best texture.
