Description
These soft and chewy White Chocolate Chip Cookies are a delightful treat featuring partially melted butter for extra tenderness and rich flavor. The dough is chilled to enhance texture, then baked to golden perfection with melty pockets of white chocolate chips inside and on top for an irresistible finish.
Ingredients
Butter Mixture
- ½ cup (113 g) unsalted butter, partially melted and cooled
Dry Ingredients
- 1½ cups (180 g) all purpose flour
- ½ teaspoon salt
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
Sugars & Flavorings
- ½ cup (100 g) granulated sugar
- ½ cup (100 g) light brown sugar
- 1 large egg, room temperature
- 1 teaspoon vanilla bean paste
Add-ins
- 1 cup (170 g) white chocolate chips, plus more for topping
Instructions
- Melt Butter: Slice the butter into tablespoon-sized pieces and place them in a microwave-safe bowl. Heat for 45 seconds until most butter is melted but some pieces remain solid. Stir to combine, then chill in the fridge for 20 minutes.
- Mix Dry Ingredients: In a bowl, whisk together the flour, baking soda, baking powder, and salt until evenly combined. Set this mixture aside.
- Combine Wet Ingredients: In a large mixing bowl, whisk the partially melted butter with the brown and granulated sugars for 1 minute until smooth. Add the egg and vanilla bean paste, whisking until fully incorporated and smooth.
- Form Dough: Gradually mix the dry ingredients into the wet ingredients until just combined. Gently fold in the white chocolate chips to evenly distribute.
- Chill Dough: Cover the cookie dough and refrigerate for 30 minutes to 2 hours, or up to overnight, to firm up and enhance flavors.
- Preheat Oven and Prepare Baking Sheet: Preheat the oven to 375°F (190°C) for about 30 minutes. Line a large baking sheet with parchment paper.
- Shape Cookies: Using a medium cookie scoop (about 2 tablespoons/30 ml), scoop dough balls onto the prepared baking sheet, spacing them about 3 inches (8 cm) apart for spreading.
- Bake Cookies: Bake for 9 to 11 minutes until edges are lightly golden and tops are set. Remove from the oven and immediately press additional white chocolate chips onto the hot cookies if desired.
- Cool Cookies: Let cookies cool on the baking sheet for 5-10 minutes before transferring to a wire rack to cool completely to room temperature. Enjoy!
Notes
- Ensure the butter is partially melted but cooled to avoid scrambling the eggs when mixing.
- Chilling the dough helps control spreading and develops better texture.
- Adding extra white chocolate chips on top after baking gives an attractive, melty finish.
- The cookies can be stored in an airtight container for up to 5 days or frozen for longer storage.
