Instructions
- Cook Pasta: In a large pot of boiling salted water, cook the spaghetti al dente according to package instructions. Reserve ½ cup of the cooking water, then drain the pasta and return it to the pot to keep warm.
- Prepare Tuna Sauce: Heat olive oil in a large skillet over medium heat. Add the minced garlic and cook until fragrant, about 30 seconds. Stir in the drained tuna, lemon zest, lemon juice, salt, and pepper. Toss to combine thoroughly.
- Toss Pasta and Sauce: Add the cooked pasta, drained capers, and ½ cup of the reserved pasta water to the skillet. Toss everything together to fully coat the pasta and heat through for 1-2 minutes.
- Finish and Serve: Turn off the heat, then stir in the fresh parsley and grated Parmesan cheese. Serve immediately, garnishing with additional parsley and Parmesan cheese as desired.
