Potatoes and Seasoning

  • 4 large Russet potatoes (peeled and diced)

  • 1 teaspoon ground cumin

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400 degrees F. Lightly oil a large rimmed baking sheet or two smaller baking sheets to prevent the potatoes from sticking and to promote crispiness.
  2. Parboil the Potatoes: Peel and dice the potatoes into roughly 3/4-inch chunks. Rinse them under cold water to remove excess starch. Bring a large pot of water to a boil, enough to cover the potatoes. Add the diced potatoes carefully and boil for 5-7 minutes until they are partly cooked but still firm with some resistance when pierced with a fork.
  3. Drain and Dry: Drain the potatoes using a strainer and let them sit for about 3 minutes to dry. Shake the strainer lightly to roughen up the potato surfaces, which helps the coating adhere better.
  4. Coat the Potatoes: In a large bowl, combine the parboiled potatoes with olive oil, cornstarch, salt, onion powder, garlic powder, cumin, paprika, and cayenne pepper. Toss thoroughly to evenly coat all pieces with the seasoning and oil mixture.
  5. Arrange and Bake: Spread the coated potatoes in a single layer on the prepared baking sheet(s). Bake in the oven for 40-45 minutes, flipping the potatoes halfway through the baking time to ensure even browning and crispiness.
  6. Assemble the Tacos: Warm the tortillas. Once the potatoes are golden and crispy, serve them inside the warm tortillas. Top the tacos generously with chipotle sauce, shredded vegan cheddar cheese, shredded lettuce, and diced tomatoes to finish.
