Ingredients
Plain Roasted Sweet Potatoes
- 2 pounds sweet potatoes (about 3 large, peeled and cut into 1/2-inch pieces; Red Garnet or Jewel sweet potatoes recommended)
- 2 tablespoons melted coconut oil
- 3/4 teaspoon fine sea salt (use less if using table salt)
- 1 tablespoon light brown sugar (firmly packed)
Seasoned Roasted Sweet Potatoes
- 2 pounds sweet potatoes (about 3 large, peeled and cut into 1/2-inch pieces)
- 2 tablespoons olive oil
- 3/4 teaspoon fine sea salt (use less if using table salt)
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon ground chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon garlic powder
Instructions
- Preheat the oven: Heat your oven to 425°F (220°C) to prepare for roasting the sweet potatoes.
- Prepare sweet potatoes: Peel sweet potatoes and cut them into 1/2-inch cubes, making sure pieces are relatively uniform to ensure even cooking.
- Make Plain Roasted Sweet Potatoes: Place the cubed sweet potatoes in your largest sheet pan. Drizzle with melted coconut oil, sprinkle sea salt and brown sugar evenly over the potatoes. Toss everything thoroughly to coat each piece evenly.
- Arrange for roasting: Spread the sweet potatoes out in a single even layer on the sheet pan, ensuring no pieces overlap to avoid steaming rather than roasting.
- Roast and flip: Place the sheet pan in the oven and roast for a total of 27-35 minutes, flipping the sweet potatoes every 10-15 minutes to promote even browning. Typically, flipping every 10 minutes and roasting for about 30 minutes works well.
- Make Seasoned Roasted Sweet Potatoes: Alternatively, for the seasoned version, place cubed sweet potatoes on a large sheet pan, drizzle with olive oil, and sprinkle salt, pepper, chili powder, paprika, cumin, and garlic powder. Toss well to fully coat.
- Arrange and roast seasoned potatoes: Spread seasoned sweet potatoes in an even layer without overlapping. Roast at 425°F flipping every 10-15 minutes for 27-35 minutes until tender and caramelized.
- Serve: Remove from the oven and serve immediately as a flavorful and wholesome side dish.
