Piyaz is a refreshing Turkish white bean salad featuring tender butter beans, vibrant tomatoes, and zesty red onions infused with sumac. Tossed with olive oil, lemon juice, vinegar, and fragrant herbs, this light and tangy salad is perfect as a side dish or a healthy snack.
Ingredients
Vegetables
- 1 red onion, thinly sliced
- 3 medium tomatoes, diced
- 1/4 cup fresh parsley, chopped

Instructions
- Prepare the onions: In a large bowl, combine the thinly sliced red onions with 2 teaspoons of sumac and half a teaspoon of sea salt. Using your hands, rub and massage the sumac and salt into the onions for 30 to 60 seconds until they soften slightly and release their flavor.
- Add vegetables and beans: Add the diced tomatoes, drained butter beans, and chopped fresh parsley into the bowl with the onions. Mix all the ingredients together gently to combine the flavors evenly.
- Make the dressing: Pour in the fresh lemon juice, vinegar, and olive oil along with the remaining half teaspoon of salt. Toss the salad thoroughly until all components are well coated in the tangy dressing.
- Season and serve: Taste the salad and adjust the seasoning with additional salt and black pepper if needed. Sprinkle the Aleppo chili flakes (pul biber) over the top for a mild, smoky heat and serve immediately for the freshest taste.
- Optional marination: Cover the salad bowl and let it marinate at room temperature for 20 to 30 minutes. This resting time allows the flavors to meld beautifully, enhancing the overall taste before serving.
