Ingredients
Salmon
- 2 salmon fillets (approximately 6 ounces/175 grams each)
- Salt and pepper, to taste
Marinade and Topping
- 1 clove garlic, minced
- 1 tablespoon olive oil
- 1/4 teaspoon Dijon mustard
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon honey
- 1/3 cup pistachios, coarsely chopped
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to get it ready for baking the salmon.
- Prepare Salmon: Rinse the salmon fillets and pat them dry with paper towels. Place the fillets skin-side down on a parchment-lined quarter sheet baking pan. Season both sides with salt and pepper to your taste.
- Make Marinade: In a small mixing bowl, combine the minced garlic, olive oil, Dijon mustard, lemon juice, and honey. Mix well to create a flavorful marinade.
- Apply Marinade: Spread about three-quarters of this marinade evenly over the top of each salmon fillet, ensuring a good coating for flavor.
- Prepare Pistachio Topping: Add the coarsely chopped pistachios to the remaining marinade mixture and stir to combine thoroughly.
- Add Pistachio Crust: Spoon the pistachio mixture evenly on top of each salmon fillet and gently press it into the fish using the back of a spoon to help it adhere.
- Bake Salmon: Place the baking pan in the preheated oven and bake for 15 to 20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Rest Before Serving: Remove the salmon from the oven and allow it to rest for about 5 minutes. This helps the juices redistribute and enhances the flavor before serving.
Notes
- Ensure that the salmon fillets are of even thickness for uniform cooking.
- Coarsely chopped pistachios provide the best texture; avoid finely powdered nuts.
- You can substitute Dijon mustard with whole grain mustard if desired.
- Serve with a side of steamed vegetables or a fresh green salad for a complete meal.
- Leftover salmon can be refrigerated for up to 2 days.
