Ingredients

Salmon

  • 2 salmon fillets (approximately 6 ounces/175 grams each)
  • Salt and pepper, to taste

Marinade and Topping

  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1/4 teaspoon Dijon mustard
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon honey
  • 1/3 cup pistachios, coarsely chopped


Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to get it ready for baking the salmon.
  2. Prepare Salmon: Rinse the salmon fillets and pat them dry with paper towels. Place the fillets skin-side down on a parchment-lined quarter sheet baking pan. Season both sides with salt and pepper to your taste.
  3. Make Marinade: In a small mixing bowl, combine the minced garlic, olive oil, Dijon mustard, lemon juice, and honey. Mix well to create a flavorful marinade.
  4. Apply Marinade: Spread about three-quarters of this marinade evenly over the top of each salmon fillet, ensuring a good coating for flavor.
  5. Prepare Pistachio Topping: Add the coarsely chopped pistachios to the remaining marinade mixture and stir to combine thoroughly.
  6. Add Pistachio Crust: Spoon the pistachio mixture evenly on top of each salmon fillet and gently press it into the fish using the back of a spoon to help it adhere.
  7. Bake Salmon: Place the baking pan in the preheated oven and bake for 15 to 20 minutes, or until the salmon is cooked through and flakes easily with a fork.
