Ingredients

Oat Base

  • 2/3 cup peanut butter
  • 3/4 cup old fashioned (rolled) oats
  • 2 tbsp maple syrup

Regular Filling

  • 1 tbsp peanut butter (per oat cup)

Protein Filling

  • 1/2 cup peanut butter
  • 3 tbsp protein powder

Chocolate Coating

  • 1 cup chocolate chips (melted)
  • 2 tsp oil (to help melt chocolate)
  • flaky sea salt (optional)


Instructions

  1. Prepare the oat base: In a bowl, thoroughly mix together the peanut butter and maple syrup until smooth and combined. Next, add the old fashioned oats to the mixture and stir until all ingredients are well incorporated.
  2. Form the base cups: Scoop approximately 2 tablespoons of the oat mixture into each cavity of a silicone mold. Use the back of a spoon or your fingers to press the mixture down firmly and evenly, creating a compact base layer.
  3. Add the filling: For the regular filling, place 1 tablespoon of peanut butter on top of each oat base. For the protein-filled option, combine the peanut butter and protein powder until smooth, then spread this mixture evenly atop each base layer.
  4. Freeze the bases: Place the silicone mold with the filled oat cups into the freezer for 20 minutes to let the layers firm up and set properly.
  5. Melt the chocolate: While the oat cups are freezing, melt the chocolate chips with 2 teaspoons of oil in a microwave-safe bowl. Heat in 30-second increments, stirring well between each, until the chocolate is smooth and completely melted.
  6. Coat the cups with chocolate: Remove the oat cups from the freezer and spoon the melted chocolate over the top of each cup, ensuring full coverage.
