It is naturally sweetened with pure maple syrup and flavored with cinnamon and vanilla, providing a comforting, nutritious start to your day.
Ingredients
Dry Ingredients
- 4 cups rolled oats
- 1 tsp salt
- 1/2 tsp cinnamon
Wet Ingredients
- 3 cups mashed banana (or substitute with a banana-free version)
- 1/3 cup nut butter (or oil, or additional water)
- 1/3 cup pure maple syrup (or agave syrup or honey)
- 1 tsp vanilla bean paste
- 2 eggs (or 1/2 cup water as egg substitute)
Fruit
- 3 cups diced peaches
Instructions
- Preheat oven and prepare pan: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper or grease the bottom and sides thoroughly to prevent sticking.
- Mix dry and wet ingredients: In a large mixing bowl, combine the rolled oats, salt, and cinnamon. Add the mashed bananas, nut butter (or oil/water), maple syrup, vanilla bean paste, and eggs (or water). Stir until the mixture is well combined and uniform in texture.
- Add peaches to batter: Fold in two cups of the diced peaches into the oatmeal mixture gently, ensuring they are evenly distributed without mashing them too much.
- Assemble and bake: Transfer the oatmeal batter into the prepared baking pan, spreading it evenly. Arrange the remaining one cup of diced peaches on top to create a fresh peach topping.
- Bake until golden and bubbly: Place the pan in the preheated oven and bake for 40 minutes or until the edges are golden brown and the oatmeal is set and bubbly.
- Serve and store: Serve hot for a warm breakfast, or allow the baked oatmeal to cool completely for easy slicing into bars. Refrigerate leftovers for up to four days or slice and freeze for up to five months.
Notes
- You can substitute bananas with other mashed fruits if you prefer a banana-free version.
- For a vegan version, replace eggs with 1/2 cup water or a flax egg substitute.
- Use any type of nut butter or neutral oil if preferred.
- Ensure the baking pan is well greased or lined to prevent sticking.
- Leftover baked oatmeal bars freeze well and can be reheated individually.
