Ingredients

Spices & Seasonings

  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne or ground chipotle
  • 1 1/4 teaspoons salt

Chicken & Oil

  • 1 – 1 1/4 lb skinless chicken breasts or thighs (preferably skin-on, bone-in thighs)
  • 2 tablespoons olive oil

Vegetables & Fruits

  • 2 shallots, sliced into thin rings (about 1/2 cup)
  • 2 large peaches, cut into 1/2 inch thick wedges

Additional

  • 2 tablespoons lime juice, more for garnish
  • 1 tablespoon honey


Instructions

  1. Preheat oven: Preheat your oven to 400°F (205°C), preparing it for finishing the chicken if using thighs.
  2. Mix spices: In a small bowl, combine the chili powder, cumin, smoked paprika, cayenne (or chipotle), and salt to create a flavorful spice blend.
  3. Season chicken: Generously season all sides of the chicken with the spice mixture, ensuring full coverage for maximum flavor.
  4. Sear chicken: Heat olive oil in a skillet over medium to medium-high heat. Place the chicken skin-side down if using skin-on thighs, and sear until the skin is deeply golden and crispy, about 5-7 minutes. Flip and sear the other side for 4-5 minutes. Remove chicken from the pan and cover with foil to keep warm.
  5. Sauté shallots and peaches: In the same skillet, add the sliced shallots over medium heat and sauté, stirring often, until tender, approximately 3-4 minutes. Add the peach wedges and gently sauté for about 2 minutes, turning them once they begin to soften and caramelize. Avoid overcooking to maintain their texture. Stir in 2 tablespoons lime juice and 1 tablespoon honey carefully, aiming to keep the peaches intact. Turn off heat once warmed through.
  6. Finish cooking chicken: Nestle the chicken back into the skillet among the peach and shallot mixture. If using chicken breasts, simmer gently on the stovetop until cooked through to an internal temperature of 160°F (71°C). For thighs, place the entire skillet in the preheated oven and bake until fully cooked, reaching 165°F (74°C).
  7. Garnish and serve: Squeeze additional lime juice over the chicken and garnish with fresh cilantro. Serve directly from the skillet or transfer to a platter, spooning the pan juices over the top to enhance the flavor.
