Ingredients

For the Tilapia:

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 skinless tilapia fillets
  • Salt and freshly ground black pepper, to taste
  • Chopped fresh parsley, for garnish

For the Sauce:

  • 2 tablespoons butter, divided
  • 3 cloves garlic, minced
  • ½ cup low sodium chicken broth
  • ¼ cup heavy cream
  • 2 tablespoons fresh lemon juice
  • Salt and freshly ground black pepper, to taste


Instructions

  1. Heat the skillet: Set a skillet over medium heat and add 1 tablespoon olive oil and 1 tablespoon butter, allowing the butter to melt and the mixture to heat up.
  2. Cook the fish: Season the tilapia fillets with salt and freshly ground black pepper. Place the fillets into the heated skillet and cook for about 3 minutes on each side until golden and cooked through. Remove the cooked fish from the skillet and set aside.
  3. Prepare the sauce base: Add 1 tablespoon butter to the same skillet and melt it over medium-high heat. Add the minced garlic and sauté for about 15 seconds until fragrant but not browned.
  4. Reduce the broth: Slowly whisk in the low sodium chicken broth and cook for about 4 minutes or until the liquid reduces by one-third to concentrate the flavors.
  5. Add cream and butter: Reduce the heat to medium-low. Add the remaining butter slowly while whisking, then gradually whisk in the heavy cream, ensuring the sauce is smooth and combined. Keep whisking to prevent the cream from curdling.
  6. Finish the sauce with lemon: Stir in the fresh lemon juice, continuing to whisk to fully incorporate. Season the sauce with salt and freshly ground black pepper, tasting and adjusting seasoning as needed.
  7. Combine fish and sauce: Remove the skillet from heat. Either pour the sauce directly over the prepared tilapia fillets or return the fish to the skillet and spoon the sauce over the fillets evenly.
  8. Garnish and serve: Sprinkle chopped fresh parsley over the fish for a fresh, vibrant garnish and serve immediately while warm.
