Ingredients
Bread Ingredients
- 1 ½ cups mashed ripe bananas (about 2 to 3 bananas)
- ⅓ cup vegetable oil
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 teaspoon vanilla bean paste
- 2 large eggs
- ½ cup granulated sugar
- ¼ cup brown sugar
- 1 ½ cups all-purpose flour
- 1 cup Oreo cookies, chopped
Glaze Ingredients
- 1 cup powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla bean paste
- ½ cup Oreo cookies, chopped
Instructions
- Prep pan. Preheat your oven to 350°F (175°C) and grease an 8×4 inch loaf pan thoroughly to prevent sticking.
- Mash bananas. Place ripe bananas in a large bowl and mash them until mostly smooth, leaving just a few small lumps for texture.
- Mix base. Add vegetable oil, baking soda, and salt to the mashed bananas and stir until all ingredients are well combined.
- Add wet ingredients. Whisk in vanilla bean paste, eggs, granulated sugar, and brown sugar until the mixture becomes smooth and uniform.
- Add dry ingredients. Gently stir in the all-purpose flour just until no streaks of flour remain; avoid overmixing to keep bread tender.
- Fold in Oreos. Carefully fold in the chopped Oreo cookies, distributing them evenly throughout the batter.
- Bake. Pour the batter into the prepared loaf pan and bake for 50 to 60 minutes. Check doneness by inserting a toothpick in the center; it should come out clean when ready.
- Cool. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Glaze. In a small bowl, whisk together powdered sugar, milk, and vanilla bean paste until smooth. Drizzle this glaze over the cooled loaf and sprinkle with additional chopped Oreos. Allow the glaze to set for 5 to 10 minutes before slicing and serving.
Notes
- Use ripe bananas for the best sweetness and moisture in the bread.
- Be careful not to overmix the batter; overmixed batter can make the bread dense.
- Let the bread cool completely before applying the glaze to prevent it from running off.
- The Oreos add crunch and chocolate flavor; for a different twist, try using double-stuffed Oreos or other sandwich cookies.
- The glaze adds sweetness and a pretty finish, but you can omit it for a less sweet bread.
