Ingredients

Beef and Seasoning

  • 1 tablespoon olive oil
  • 1 pound ground beef (90% lean)
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon dried Italian seasoning

Sauce and Pasta

  • 1 (15-ounce) can tomato sauce
  • 1 (32-ounce) box low-sodium beef broth
  • 10 ounces mini penne
  • ½ cup grated Parmesan cheese

Garnish

  • Chopped parsley for garnish


Instructions

  1. Cook the beef: Heat the olive oil in a 12-inch pan over medium-high heat. Add the ground beef and break it apart as it cooks until fully browned. Once cooked, season with kosher salt, black pepper, and Italian seasoning, stirring to combine evenly.
  2. Add liquids: Pour in the tomato sauce and low-sodium beef broth. Stir to mix everything, then cover the pan. Bring the mixture to a boil over medium-high heat.
  3. Add pasta and simmer: Once boiling, uncover and stir in the dry mini penne pasta. Reduce heat to maintain a strong simmer or low boil. Allow the pasta to cook, uncovered, for 15 to 20 minutes, stirring occasionally to prevent sticking and ensure even cooking.
  4. Thicken sauce and finish: As the pasta cooks, the sauce will reduce and thicken. When the pasta is tender but the sauce still slightly loose, stir in the grated Parmesan cheese. This will further thicken the sauce. Garnish with chopped parsley if desired, then serve hot.

  • Use low-sodium beef broth to control the saltiness of the dish.
