Description

These chewy and delicious Oatmeal Cookie Bars combine the classic flavors of oatmeal cookies and chocolate chips into a convenient bar form. Perfectly balanced with a hint of cinnamon and a rich buttery base, these bars are ideal for snacks, dessert or on-the-go treats.


Ingredients

Wet Ingredients

  • 1 cup butter (melted)
  • 1 cup light brown sugar (tightly packed)
  • ½ cup sugar
  • 2 large eggs + 1 large egg yolk
  • 1 ½ teaspoons vanilla extract

Dry Ingredients

  • 1 ¼ cup all-purpose flour
  • 2 teaspoons cornstarch (cornflour in UK)
  • ½ teaspoon baking powder
  • ¾ teaspoon salt
  • ¼-½ teaspoon ground cinnamon (optional)
  • 3 cups old fashioned rolled oats

Add-ins

  • 1 ½ cups chocolate chips (optional, mix of semisweet, milk, and butterscotch chips)


Instructions

  1. Preheat oven and prepare pan: Preheat your oven to 350°F (175°C). Line a 9×9 inch metal baking pan with parchment paper, or alternatively, grease and flour the pan to prevent sticking.
  2. Combine butter and sugars: In a large mixing bowl, combine the melted butter with the light brown sugar and granulated sugar. Stir thoroughly until the mixture is smooth and well-combined.
  3. Add eggs and vanilla: Add the 2 large eggs and 1 egg yolk along with the vanilla extract to the butter and sugar mixture. Stir well to integrate all wet ingredients uniformly.
  4. Mix dry ingredients: In a separate bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and ground cinnamon if using. Ensure the dry ingredients are evenly combined.
  5. Combine wet and dry: Gradually add the dry ingredients into the wet mixture. Stir continuously until you achieve a completely combined dough.
  6. Add oats and chocolate chips: Fold in the rolled oats and chocolate chips, mixing until they are distributed evenly throughout the dough.
  7. Bake the bars: Spread the cookie dough evenly into the prepared baking pan. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
