Ingredients
For the Noodles
- 10 ounces rice noodles
For the Beef and Sauce
- 1 pound ground beef (80/20)
- 1 teaspoon fresh ginger, finely minced
- 4 garlic cloves, finely minced
- ½ cup low-sodium soy sauce
- 2 tablespoons dark soy sauce
- ½ cup water
- ¼ cup brown sugar
- 3 tablespoons cornstarch
- Cooking oil (for stir-frying, about 1 tablespoon)
For Garnish
- Green onions, sliced
- White sesame seeds
Instructions
- Prepare the sauce: In a bowl, whisk together the low-sodium soy sauce, dark soy sauce, water, brown sugar, and cornstarch until smooth. Set aside to let the flavors combine.
- Cook the rice noodles: Follow the package instructions to cook the rice noodles until tender. Drain and set aside to keep warm.
- Cook the ground beef: Heat a large wok or skillet over medium-high heat and add a small amount of cooking oil. Once hot, add the ground beef and use a wooden spoon or spatula to break it into small pieces. Cook until almost no pink remains, approximately 5-7 minutes.
- Add aromatics: Stir in the minced ginger and garlic with the cooked beef and continue to cook for 2 to 3 minutes until fragrant and aromatic.
- Simmer with sauce: Pour the prepared sauce over the beef mixture and lower the heat to medium. Allow it to gently simmer and thicken for 3 to 4 minutes, stirring occasionally to prevent sticking.
- Toss noodles with beef and sauce: Add the cooked rice noodles on top of the beef and sauce mixture. Toss everything together carefully to ensure the noodles are thoroughly coated in the rich, thick sauce.
- Garnish and serve: Plate the Mongolian beef noodles and garnish with sliced green onions and a sprinkle of white sesame seeds. Serve immediately while hot.
Notes
- Use low-sodium soy sauce to control saltiness and keep the dish balanced.
- Adjust brown sugar to taste if you prefer a sweeter or less sweet sauce.
- For a gluten-free option, ensure soy sauce is gluten-free or substitute with tamari.
- Ground beef with 80/20 fat ratio offers good flavor and moisture; leaner beef might result in a drier dish.
- Use fresh ginger and garlic for the best aromatic flavor.
- Rice noodles can be substituted with other types of noodles if desired, but cooking time will vary.
