Ingredients
Pasta and Broth
- 16 oz. linguine, uncooked
- 6 cups vegetable broth
Vegetables and Aromatics
- 1 small red onion, diced
- 4 cloves garlic, minced
- 1 pint grape tomatoes
- 1 (15 oz.) can artichoke hearts
Olives
- 1/2 cup pitted green olives
- 1/2 cup pitted black olives
Herbs and Cheese
- 1/2 cup fresh chopped dill, plus more for garnish
- 1/2 cup crumbled feta cheese, plus more for garnish
Seasonings
- Salt, to taste (a couple large pinches)
- Black pepper, to taste (a large pinch)
Instructions
- Combine Ingredients: Add the uncooked linguine, vegetable broth, diced red onion, pitted green and black olives, grape tomatoes, artichoke hearts, minced garlic, and season with salt and pepper directly into a large pot. Stir everything together to combine well.
- Bring to Simmer: Place the pot over high heat and bring the mixture to a simmer, ensuring the broth starts bubbling gently.
- Cook Pasta: Reduce the heat to medium-low and let it simmer uncovered for 10-12 minutes, stirring occasionally, until the linguine is al dente and most of the liquid is absorbed.
- Add Dill and Feta: Stir in the fresh chopped dill and crumbled feta cheese. The feta will begin to melt and blend with the residual moisture to create a light, creamy sauce coating the pasta.
- Garnish and Serve: Finish by garnishing with extra fresh dill and additional crumbled feta on top. Serve immediately for best flavor and texture.
Notes
- Using vegetable broth infuses the pasta with extra flavor, but if you prefer a richer taste, chicken broth can be substituted.
- Be sure to watch the pasta closely in the last few minutes to avoid overcooking and ensure it remains al dente.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently.
- For a vegan version, replace feta with a plant-based cheese alternative or nutritional yeast.
- Fresh dill adds a bright, herbaceous notes; if unavailable, fresh parsley can be used as a substitute.
