Description

This Mediterranean One Pot Pasta is a quick and vibrant dish combining linguine with a medley of olives, artichoke hearts, grape tomatoes, and fresh dill, all cooked together in vegetable broth. Ingredients

Pasta and Broth

  • 16 oz. linguine, uncooked
  • 6 cups vegetable broth

Vegetables and Aromatics

  • 1 small red onion, diced
  • 4 cloves garlic, minced
  • 1 pint grape tomatoes
  • 1 (15 oz.) can artichoke hearts

Olives

  • 1/2 cup pitted green olives
  • 1/2 cup pitted black olives

Herbs and Cheese

  • 1/2 cup fresh chopped dill, plus more for garnish
  • 1/2 cup crumbled feta cheese, plus more for garnish

Seasonings

  • Salt, to taste (a couple large pinches)
  • Black pepper, to taste (a large pinch)


Instructions

  1. Combine Ingredients: Add the uncooked linguine, vegetable broth, diced red onion, pitted green and black olives, grape tomatoes, artichoke hearts, minced garlic, and season with salt and pepper directly into a large pot. Stir everything together to combine well.
  2. Bring to Simmer: Place the pot over high heat and bring the mixture to a simmer, ensuring the broth starts bubbling gently.
  3. Cook Pasta: Reduce the heat to medium-low and let it simmer uncovered for 10-12 minutes, stirring occasionally, until the linguine is al dente and most of the liquid is absorbed.
  4. Add Dill and Feta: Stir in the fresh chopped dill and crumbled feta cheese. The feta will begin to melt and blend with the residual moisture to create a light, creamy sauce coating the pasta.
  5. Garnish and Serve: Finish by garnishing with extra fresh dill and additional crumbled feta on top. Serve immediately for best flavor and texture.
