Ingredients

Chicken Marinade

Oven-Roasted Greek Fries

  • 2-3 gold potatoes (about 1.5 pounds), peeled if desired & sliced into 1/3-inch fries
  • 3 tablespoons olive oil
  • Juice of 1 lemon, divided
  • 2 teaspoons dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Kosher salt and ground black pepper, to season (about 1 teaspoon salt)

Tzatziki-ish Herbed Yogurt Drizzle

  • 1/2 cup Greek yogurt (whole milk or 2%)
  • Zest and juice of 1 lemon
  • 1 clove garlic, finely chopped or grated
  • 2 tablespoons finely chopped fresh dill
  • 1-2 tablespoons water, to thin (optional)
  • Kosher salt and ground black pepper, to season (about 1/2 teaspoon salt)

For Serving (Optional)

  • Warm pita bread (store-bought or homemade)
  • Shredded lettuce
  • Sliced cucumber
  • Pickled red onions
  • Crumbled feta cheese
  • Chopped fresh dill


Instructions

  1. Preheat the oven: Position one oven rack in the center and a second rack directly under the broiler. Preheat the oven to 450°F (230°C). Prepare all ingredients as listed in the ingredients section.
  2. Marinate the chicken: In a medium bowl, whisk together olive oil, lemon zest and juice, garlic, and dried oregano. Season with kosher salt and black pepper. Add chicken thighs, tossing to coat evenly in the marinade. Let marinate at room temperature for 30 minutes or refrigerate up to 6 hours for deeper flavor.
  3. Prepare the oven-roasted Greek fries: Line a large baking sheet with foil for easier cleanup. Arrange sliced potatoes on the baking sheet.   6. Optional broiling for crispiness: For a crispier texture, transfer cooked chicken to a cutting board and slice into bite-sized pieces. Place sliced chicken back on baking sheet and broil under the top broiler rack for 4-5 minutes, turning halfway to brown and crisp surfaces.
  7. Prepare the tzatziki-ish herbed yogurt drizzle: While chicken and fries roast, combine Greek yogurt, lemon zest and juice, garlic, and chopped fresh dill in a small bowl. Season with kosher salt and black pepper. Whisk until smooth. Add 1-2 tablespoons water if needed to reach desired drizzle consistency. Set aside or refrigerate up to 5 days.
  8. Assemble Greek chicken pitas and serve: Warm pita bread in the oven directly on the rack for 1-2 minutes. Layer pita with shredded lettuce, oven-roasted fries, lemony chicken slices, crumbled feta, cucumber slices, pickled red onions, and fresh dill.
