Description

A refreshing and zesty Lemon Pizza featuring a crispy crust, creamy fresh mozzarella, and a bright lemon-infused topping. This easy no-knead pizza recipe combines the vibrant flavors of lemon zest and juice with garlic and fresh herbs, finished with grated parmesan and freshly ground black pepper for a unique and delicious twist on classic pizza.

Ingredients

Pizza Dough

  • 1 ball Easy pizza dough (or store-bought dough)

Lemon Brine

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon water
  • 1 tablespoon fresh parsley, chopped
  • 1 small garlic clove, grated
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • ¼ teaspoon fine salt
  • ¼ teaspoon black pepper

Topping

  • 5 oz (150 grams) fresh mozzarella (or ½ to cup shredded firm mozzarella)
  • 1 tablespoon lemon juice
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon fresh parsley, chopped
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the pizza dough: Follow your easy no-knead pizza dough recipe through to shaping the pizza and preheating the oven and pizza stone as instructed.
  2. Prepare the cheese: If using fresh mozzarella in water, cut into ½ inch thick slices. Dab excess moisture with paper towels if the cheese is very watery to prevent sogginess.
  3. Shape the dough: Place the dough on a parchment paper sheet. Starting from the center, gently press outwards with your fingers to shape a roughly 9×13 inch rectangle. Transfer the dough on the parchment to a pizza peel or the back of a rimmed baking sheet.
  4. Make the lemon brine: In a glass jar with a lid, combine extra virgin olive oil, water, chopped parsley, grated garlic, lemon zest, lemon juice, fine salt, and black pepper. Shake vigorously until well emulsified.
  5. Add the topping: Once the dough is stretched out, create a few dimples by pressing your fingers gently into the dough. Evenly drizzle the lemon brine over the dough, filling the dimples with the mixture. Spread the mozzarella cheese evenly over the top.
  6. Bake the pizza: Use the pizza peel to carefully transfer the pizza along with the parchment paper onto the preheated pizza stone in the oven. Bake for approximately 8-10 minutes in a fan-forced oven, or until the crust and cheese are nicely browned. Monitor closely as oven times may vary.
  7. Finish and serve: Remove the pizza from the oven. Immediately drizzle fresh lemon juice over the top, then sprinkle grated parmesan cheese and chopped parsley. Add freshly ground black pepper and optional chili flakes to taste. Slice and serve immediately for best flavor and texture.

Notes

  • For best results, use fresh mozzarella but ensure excess moisture is removed to avoid soggy pizza.
  • Preheating the pizza stone is crucial to achieve a crisp crust.
  • The lemon brine adds moisture and bright flavor to the pizza, so distribute it evenly for balanced taste.
  • Adjust baking time according to your oven’s heat distribution and pizza stone temperature.
  • Optional: Add chili flakes for a touch of heat.
