Ingredients

Brownie Batter

  • 200 g granulated sugar
  • 1 tbsp lemon zest
  • 110 g butter
  • 125 g white chocolate chips
  • 2 eggs (room temperature)
  • 1 tbsp lemon juice
  • 2 tsp vanilla bean paste
  • 160 g all-purpose flour
  • 1/4 tsp salt

Lemon Glaze

  • 125 g powdered sugar
  • 2-3 tbsp lemon juice
  • Lemon zest for decoration (optional)


Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 160ºC (325ºF) using the conventional setting. Line a 20×20 cm (8×8 inch) square pan with parchment paper to prevent sticking.
  2. Melt Butter and Chocolate: Melt the butter in a small bowl, then add the white chocolate chips and stir until completely melted and smooth. Set aside.
  3. Mix Sugar and Lemon Zest: In a large bowl, combine the granulated sugar and lemon zest. Rub them together until the mixture resembles wet sand, which helps release the lemon aroma and flavor.
  4. Combine Wet Ingredients: Add the melted butter and white chocolate mixture to the sugar and zest. Whisk together by hand until well incorporated; the mixture may look slightly separated but this is normal.
  5. Add Eggs: Crack in the eggs and mix thoroughly until incorporated. Continue whisking energetically for 1-2 minutes until the mixture becomes light and fluffy, adding air to the batter.
  6. Add Lemon Juice and Vanilla: Stir in the lemon juice and vanilla bean paste and whisk until just combined.
  7. Add Dry Ingredients: Sift together the all-purpose flour and salt, then gently whisk them into the wet batter until just combined, being careful not to overmix.
  8. Pour Batter and Bake: Pour the batter into the prepared pan and smooth out the top with a spatula. Bake in the preheated oven for 30-32 minutes. The brownies will remain light in color and should not brown.
  9. Cool: Remove the pan from the oven and transfer the brownies to a cooling rack. Allow them to cool completely before adding the glaze.
  10. Remove from Pan: Once cooled, carefully lift the brownies out of the pan using the parchment paper and place them on a serving dish.
  11. Prepare Lemon Glaze: In a small bowl, combine powdered sugar with 2 tablespoons of lemon juice. Stir until smooth and add more lemon juice as needed to reach a spreadable consistency.
  12. Glaze and Decorate: Spread the lemon glaze evenly over the cooled brownies. Optionally sprinkle additional lemon zest on top for decoration. Let the glaze set at room temperature or place in the fridge to firm up faster.
  13. Serve: Once the glaze has set, cut the brownies into 16 squares and serve.
