  • 8 ounces cream cheese, softened to room temperature

Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C). Lightly grease a medium-sized baking dish or pie plate with cooking spray to prevent sticking.
  2. Mix Ingredients: In a large bowl, combine the frozen corn kernels, chopped pickled jalapenos, salt, garlic powder, onion powder, softened cream cheese, and most of the grated cheese. Mash the cream cheese well into the corn mixture to create a creamy base, leaving some cheese aside for topping.
  3. Assemble the Dip: Transfer the combined mixture into the prepared baking dish, pressing it down evenly. Sprinkle the reserved grated cheese evenly over the top.
  4. Bake: Place the dish in the oven and bake uncovered for 30 to 40 minutes, until the top is bubbly and golden brown.
  5. Rest and Serve: Remove the dip from the oven and allow it to rest for about 5 minutes to set slightly. Serve warm with Fritos, chips, or crackers for dipping.
