Description

This Insanely Delicious Garlic Butter Pasta recipe features slow-baked confit garlic blended with creamy butter, combined with perfectly cooked pasta tossed in a luscious garlic-infused butter sauce. Finished with freshly grated Parmesan and optional rosemary, this comforting dish is simple yet intensely flavorful, perfect for a cozy meal for two.


Ingredients

Garlic Butter and Confit

  • 1 whole bulb of garlic, cloves peeled
  • 1 cup extra virgin olive oil
  • 2 – 3 sprigs fresh rosemary (plus extra for serving, optional)
  • 100 grams butter, room temperature
  • 1/4 – 1/2 teaspoon black pepper

Pasta

  • 200 grams dried pasta or 300 grams fresh pasta
  • Salt, for boiling pasta
  • Parmesan cheese, freshly grated, to serve


Instructions

  1. Confit the garlic: Place the peeled garlic cloves along with the rosemary sprigs in a small baking dish or loaf pan, ensuring the cloves aren’t spread out too thinly. Pour over enough extra virgin olive oil to mostly cover the cloves. Bake in the oven at 160°C (320°F) for 45 minutes until the garlic turns golden and soft but not browned.
  2. Make the garlic butter: Drain any excess oil from the garlic cloves, reserving the oil for other uses as it will be infused with garlic flavor. In a mini food processor or using a stick blender, blend the confit garlic cloves together with room temperature butter until smooth and well combined. Alternatively, mash the garlic thoroughly by hand and mix with butter. Wrap tightly in plastic wrap or parchment paper and refrigerate to harden before use.
  3. Cook the pasta: Bring a large pot of well-salted water to a boil and cook the pasta according to package instructions until just a few minutes shy of done. Reserve 1 cup of pasta cooking water before draining the pasta thoroughly.
  4. Prepare the sauce: Heat a large skillet over medium heat and add the prepared garlic butter. Allow it to melt completely while gently stirring, avoiding high heat to prevent burning the garlic. Once melted, add the black pepper and mix well.
  5. Combine pasta and sauce: Pour in 1/2 cup of reserved pasta water and whisk vigorously, shaking the pan if possible, to create a smooth sauce. Add the drained pasta directly into the skillet and toss thoroughly to coat all the noodles. Let the mixture gently bubble for about 30 seconds, adding more pasta water as needed to loosen the sauce and achieve desired consistency.
  6. Serve: Plate the pasta, sprinkle with freshly grated Parmesan cheese and garnish with extra fresh rosemary leaves if using. Serve immediately for best flavor and texture.

Notes

  • Peeling garlic cloves for confit is easier if separated into individual cloves and skins loosened beforehand.
  • The garlic-infused olive oil left over after confiting can be used as a flavorful base for salad dressings or to drizzle over vegetables.
  • Be careful not to burn the garlic butter sauce by keeping the heat moderate and stirring frequently.
