Instructions
- Prep: Preheat your oven to 350°F (175°C) and lightly spray three 4-inch mini springform pans with cooking spray to prevent sticking. Set the pans aside to prepare the batter.
- Blend Wet Ingredients: In a medium mixing bowl, whisk together the two large eggs until smooth. Add the ripe mashed banana and vanilla extract, stirring until everything is well combined and smooth.
