Ingredients
Chicken and Seasonings
- 2 lbs boneless, skinless chicken breasts
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Liquids
- 1 cup salsa (red or green, red preferred)
- Juice of 2 limes (optional)
- 1/2 cup chicken broth (low or no salt, or water)
Instructions
- Prepare the chicken and seasonings: Place the boneless, skinless chicken breasts in the crockpot insert. Evenly cover the chicken with chili powder, cumin, paprika, garlic powder, and onion powder. Pour the salsa over the seasoned chicken. If using, sprinkle the lime juice on top.
- Add the broth: Pour the chicken broth into the crockpot to add moisture and help the flavors meld.
- Cook the chicken: Cover the crockpot and cook on low for 4 to 6 hours for best results, allowing the chicken to cook slowly and remain tender. Alternatively, cook on high for 3 to 4 hours if pressed for time, though low and slow is recommended for juicier chicken.
- Shred the chicken: Once the chicken is fully cooked and tender, remove it from the crockpot and shred using two forks on a cutting board. Optionally, use a stand mixer or hand mixer for faster shredding, but do not use a hand mixer directly inside the crockpot to avoid damaging the enamel coating.
- Return and soak: Place the shredded chicken back into the crockpot insert to soak up the flavorful juices for a few minutes before serving.
- Serve: Spoon the shredded chicken into tortillas and top with your favorite taco toppings. Enjoy your healthy and delicious crockpot chicken tacos!
Notes
- Using low or no-salt chicken broth helps keep the recipe heart-healthy and lower in sodium.
- Lime juice is optional but adds a bright, tangy flavor that complements the spices.
- For extra spice, add a pinch of cayenne pepper or hot sauce to the salsa before cooking.
- Leftover shredded chicken can be refrigerated for up to 3 days or frozen for longer storage.
- Serve with corn or flour tortillas for traditional tacos, or use lettuce wraps for a low-carb option.
