Description

This Chicken Kafta recipe features spiced ground chicken blended with fresh parsley, onions, garlic, and aromatic cinnamon. Formed into oblong shapes and grilled to perfection, these flavorful kaftas make a delicious and easy meal, perfect for a quick weeknight dinner or weekend cookout.

Ingredients

Chicken Mixture

  • 1 pound ground chicken
  • ¼ cup parsley (finely chopped)
  • ½ small yellow onion (finely chopped)
  • 1 garlic clove (pressed)
  • 2 teaspoons cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Combine Ingredients: Place the ground chicken, parsley, onions, garlic, and spices all in a large bowl. Use your hands to mix until well blended, resulting in a slightly sticky texture.
  2. Shape the Kafta: Form the mixture into oblong shapes about 1 inch thick. You may shape them directly or skewer them onto wooden sticks for grilling.
  3. Preheat Grill: Grease the grates of a gas grill or an indoor grill pan and preheat to medium-high heat to ensure proper cooking and prevent sticking.
  4. Grill Kafta: Place the kafta on the grill and cook for 4-5 minutes per side, ensuring the chicken is cooked thoroughly through to a safe internal temperature.
  5. Serve: Remove from the grill and serve hot with your preferred sides, such as rice, salad, or pita bread.

Notes

  • You can use wooden or metal skewers if you want to make kebabs, just soak wooden skewers in water for 30 minutes prior to grilling to prevent burning.
  • Make sure the grill is well-oiled to avoid sticking and tearing of the kafta.
  • Check chicken doneness by ensuring it reaches an internal temperature of 165°F (74°C).
  • For added flavor, serve with a side of tzatziki or garlic yogurt sauce.
