Ingredients
For the Potatoes
- 1 lb Yukon gold potatoes, cut into ½ inch cubes
- 2 tablespoons ghee or butter
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1 teaspoon dried thyme
- ½ teaspoon dried oregano
- ½ teaspoon sea salt, plus more to taste
- ¼ teaspoon ground black pepper, plus more to taste
For the Steak
- 1¼ lb sirloin steak, cut into ½ inch cubes
- 2 tablespoons ghee or butter
- Salt and pepper to taste
- Freshly chopped parsley, for garnish
Instructions
- Prep: Cut the Yukon gold potatoes and sirloin steak into ½ inch cubes. Mince the garlic cloves and chop fresh parsley for garnish.
- Heat the Skillet: Warm a large cast iron skillet over medium heat. Add the olive oil and two tablespoons of ghee to the pan until melted and hot.
- Cook the Potatoes: Add the cubed potatoes to the skillet. Sprinkle minced garlic, dried thyme, dried oregano, sea salt, and black pepper over the potatoes. Cook for 2-3 minutes without stirring to start browning, then stir. Continue cooking and stirring every 1-2 minutes until potatoes are golden brown and fork tender, about 8-10 minutes. Remove potatoes and browned bits from the pan and set aside.
- Sear the Steak: Increase heat to medium-high. Add remaining two tablespoons of ghee. Once melted, add steak cubes and season with salt and pepper. Allow to cook undisturbed for at least 2 minutes to develop a sear. Stir and cook for an additional 1-2 minutes until steak pieces are golden brown on all sides.
- Combine and Finish: Return the cooked potatoes to the pan with the steak. Stir gently to combine and warm through. Adjust seasoning with additional salt and pepper as desired. Garnish with freshly chopped parsley and serve immediately.
