Ingredients

  • 1 cup Rolled Oats (100g / 250ml)
  • 2 Tbsp Coconut Flakes (10g / 33ml)
  • 2 Tbsp Almonds (20g / 38ml), chopped

Wet Ingredients

  • 2 Tbsp Coconut Oil (30g / 35ml), melted
  • 2 Tbsp Maple Syrup (30g / 25ml)


Instructions

  1. Preheat Oven: Preheat your oven to 180°C (356°F) to prepare for baking the cookies.
  2. Prepare Ingredients: Chop the almonds into small pieces for better texture and melt the coconut oil in the microwave until fully liquid.
  3. Make Cookie Dough: In a large mixing bowl, combine the rolled oats, coconut flakes, and chopped almonds. Add the melted coconut oil and maple syrup, then mix everything thoroughly until well combined into a dough.
  4. Form Cookies: Place a cookie cutter on a silicone baking mat or parchment paper. Spoon a few teaspoons of the cookie dough into the cookie cutter and press gently to form the cookie shape, keeping the thickness under 1 cm.
  5. Bake Cookies: Transfer the silicone mat with shaped cookies onto a baking tray. Bake in the preheated oven for 15 minutes or until the cookies turn golden brown.
