Ingredients
For the Burger Bowl:
- 1 lb ground beef (80/20 for best flavor)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- 1 tbsp soy sauce
For the Roasted Garlic Potatoes:
- 1 lb baby gold potatoes, quartered
- 1 tbsp olive oil
- ½ tsp garlic powder
- ½ tsp paprika
- ½ tsp salt
For the Toppings:
- 3 cups shredded lettuce
- ½ cup cherry tomatoes, halved
- ½ small red onion, thinly sliced
- ½ cup shredded cheddar cheese
- ¼ cup dill pickles
- 1 avocado, sliced (optional)
For the Special Sauce:
- ½ cup mayo
- 1 tbsp ketchup
- 1 tbsp yellow mustard
- 1 ½ tbsp sweet pickle juice
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp smoked paprika
Instructions
- Roast the Potatoes: Preheat your oven to 425°F. In a bowl, toss the quartered baby gold potatoes with olive oil, garlic powder, smoked paprika, and salt until evenly coated. Spread them out in a single layer on a baking sheet. Roast in the oven for 20-25 minutes, flipping halfway through, until the potatoes are golden brown and crispy.
- Make the Special Sauce: While the potatoes roast, combine mayo, ketchup, yellow mustard, sweet pickle juice, garlic powder, onion powder, and smoked paprika in a small bowl. Whisk these ingredients together until smooth and set the sauce aside.
- Cook the Burger: Heat a large skillet over medium-high heat. Crumble the ground beef into the pan and press it down to create crispy edges, mimicking a smashed burger texture. Season the beef with salt, black pepper, paprika, garlic powder, and onion powder. Cook for 5-7 minutes, occasionally stirring and breaking up the meat further, until browned and crispy. Stir in the soy sauce and cook for an additional minute to meld flavors.
- Assemble the Bowls: Divide the shredded lettuce between serving bowls. Top each with the crispy smashed beef, roasted potatoes, halved cherry tomatoes, thinly sliced red onion, shredded cheddar cheese, and dill pickles.
- Drizzle & Enjoy! Drizzle the prepared special sauce over the bowls and add sliced avocado if desired. Serve immediately for the best flavor and texture experience.
Notes
- You can substitute baby gold potatoes with fingerling or small Yukon gold potatoes if preferred.
- For a spicier kick, add a pinch of cayenne pepper to the ground beef while cooking.
- The avocado is optional but adds a creamy texture that complements the smoky and savory flavors.
- Leftover special sauce can be stored in the refrigerator for up to 5 days.
- This bowl is naturally gluten-free; just ensure your soy sauce is gluten-free if needed.
