Ingredients
Chicken
- 2 boneless skinless chicken breasts (about 1.3 lbs total)
- 2 Tbsp all-purpose flour
- 1 Tbsp lemon pepper seasoning
- 1/8 tsp freshly cracked black pepper
Cooking
- 1 Tbsp cooking oil
- 1 clove garlic, minced
- 1/2 cup chicken broth
- 1 Tbsp butter
- 1 tsp lemon juice
- 1 Tbsp chopped fresh parsley (optional)
Instructions
- Prepare the Chicken: Use a sharp knife to carefully fillet the chicken breasts into two thinner pieces or use thin-cut chicken breasts for even cooking.
- Coat the Chicken: In a bowl, combine the flour and lemon pepper seasoning. Sprinkle this mixture over both sides of the chicken pieces and rub it in thoroughly to ensure each piece is fully coated.
- Cook the Chicken: Heat the cooking oil in a large skillet over medium heat. When the oil is hot, add the chicken breasts and cook until golden brown on each side, about 5 minutes per side. Remove the cooked chicken and place it on a clean plate, covering it to keep warm.
- Sauté Garlic: Add the butter and minced garlic to the same skillet and sauté for about one minute until fragrant, taking care not to burn the garlic.
- Make the Sauce: Pour in the chicken broth and whisk the bottom of the skillet to dissolve the browned bits left from cooking the chicken. Add the lemon juice and simmer the sauce for 3-5 minutes until slightly reduced. Taste and season with salt if desired.
- Finish and Serve: Return the chicken to the skillet and spoon the sauce over the top. Allow the chicken to warm through in the sauce. Finish by seasoning with freshly cracked black pepper and optional fresh chopped parsley before serving.
