Ingredients
Meat and Spices
- 500 g (1.1 lb) minced beef (ground beef)
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1/2 tsp ground cumin
Cooking Fats and Aromatics
- 2 tsp ghee (or neutral oil)
- 1 onion (diced)
- 3 cloves garlic (minced)
- 1 tsp minced ginger
Spices and Flavorings
- 1 tbsp tomato puree (tomato paste)
- 2 tbsp curry powder
- 1 tsp garam masala
- 1 tsp ground coriander
Liquids and Vegetables
- 400 g (14 oz) tinned chopped tomatoes
- 200 ml (7 fl oz) water
- 140 g (1 cup) frozen peas
Finishing Touches
- 2 tbsp fresh coriander (cilantro), chopped
- Boiled rice (to serve)
Instructions
- Preheat the Pan: Heat a large frying pan over high heat to prepare for browning the mince.
- Brown the Minced Beef: Add the minced beef along with salt, black pepper, and ground cumin. Break up the meat and cook until fully browned, about 5 minutes, ensuring even cooking.
- Remove Mince: Using a slotted spoon, transfer the cooked mince from the pan to a bowl, leaving the rendered fat and oil behind in the pan.
- Sauté Onion: Lower the heat to medium and add 1 tsp of ghee or oil. Add diced onion to the pan and cook for 4-5 minutes until it softens, stirring occasionally to prevent burning.
- Add Aromatics & Spices: Stir in minced garlic, minced ginger, tomato puree, curry powder, garam masala, and ground coriander. Fry for about one minute whilst stirring continuously until fragrant.
- Add Tomatoes and Simmer: Pour in the tinned chopped tomatoes and water into the pan. Stir to combine and bring the mixture to a gentle simmer.
- Reintroduce Minced Beef: Return the browned mince to the pan, stir well, and let it simmer for 5-6 minutes to meld flavors.
- Add Peas and Heat Through: Stir in the frozen peas and cook for an additional 2 minutes until peas are heated properly.
- Garnish and Serve: Sprinkle fresh chopped coriander over the curry and serve hot with boiled rice. Accompany with mango chutney and naan bread or chapati for a complete meal.
