Ingredients
Chicken and Seasoning
- 2 large Boneless Chicken breasts
- 1/2 teaspoon Garlic Powder
- 1 teaspoon Mixed herb
- 1/2 teaspoon Salt
- 1/2 teaspoon Pepper
- 1 tablespoon Olive oil
Sauce
- 1.5 tablespoon Butter (divided)
- 1 tablespoon Minced garlic
- 1 tablespoon Flour
- 1 cup Stock (chicken or vegetable)
- 1/4 cup Sour Cream
- 1.5 tablespoon Ranch Seasoning
Instructions
- Prepare the chicken cutlets: Cut each chicken breast horizontally into 2 thinner cutlets to ensure even cooking and faster searing.
- Season the chicken: In a small bowl, mix garlic powder, mixed herb, salt, and pepper. Season both sides of each chicken cutlet evenly with this spice mix.
- Sear the chicken: Heat olive oil and 1.5 tablespoons butter in a skillet over medium-high heat. When hot, sear the chicken cutlets for 3-4 minutes on each side until golden brown and cooked through.
- Remove and cover chicken: Take the chicken out of the pan and keep covered to retain warmth and juices while preparing the sauce.
- Sauté garlic: In the same skillet, add 1 tablespoon butter and heat over medium. Add minced garlic and sauté for about 30 seconds until fragrant.
- Make the roux: Stir in the flour and cook for another 30 seconds, stirring constantly to form a light roux that will thicken the sauce.
- Add stock and whisk: Slowly pour in the chicken stock while whisking continuously to avoid lumps and create a smooth sauce base.
- Finish the sauce: Reduce heat to low, add sour cream and ranch seasoning, whisk well until fully combined, then turn off the heat.
- Combine chicken and sauce: Return the cooked chicken cutlets to the pan and spoon the creamy ranch sauce over them. Let them warm in the sauce briefly before serving.
Notes
- Use low-sodium stock to control salt levels.
- For a lighter version, substitute sour cream with Greek yogurt.
- Ensure the pan is hot before searing chicken to get a nice golden crust.
- Keep the chicken covered after cooking to keep it moist.
- Adjust ranch seasoning amount to taste if you prefer a less intense ranch flavor.
