Chicken
- 2 large chicken breasts
- Salt & pepper (to taste)

- 2 tablespoons butter
Mushrooms and Sauce
- 12 ounces mushrooms (cremini or white, sliced)
- 1/4 teaspoon Italian seasoning
- 3 cloves garlic (minced)
- 1/2 cup chicken broth
- 1/2 teaspoon lemon juice
- 1/2 teaspoon Dijon mustard
- 1 cup heavy or whipping cream
Instructions
- Prepare the Chicken: Cut each chicken breast in half lengthwise to create four thinner cutlets. Season all sides generously with salt and pepper. Dredge each piece in flour, shaking off excess.
- Sear the Chicken: Heat olive oil in a skillet over medium-high heat until hot. Add the chicken cutlets and cook for 4-5 minutes on each side until golden brown and cooked through. Remove from the pan and set aside on a plate.
- Sauté the Mushrooms: Add butter to the same skillet and allow it to melt. Add the sliced mushrooms and Italian seasoning. Cook, stirring occasionally, until the mushrooms release their water, the liquid evaporates, and they develop a nice sear, about 5-7 minutes. Remove mushrooms from the pan and set aside with the chicken.
- Make the Sauce Base: Add minced garlic, chicken broth, lemon juice, and Dijon mustard to the skillet. Stir well to dissolve the mustard. Allow the mixture to simmer and reduce by half, approximately 3-4 minutes.
- Finish the Sauce and Combine: Pour in the heavy cream and return the cooked chicken and mushrooms to the pan. Simmer gently for about 5 minutes until the chicken is fully cooked and the sauce thickens. Taste and season with salt and pepper as desired.
