Ingredients

Pasta

  • 200 grams dried pasta (or 300 grams fresh)

Miso Cream Sauce

  • 1.5 tablespoons white miso paste
  • 1.5 tablespoons hot water
  • 1 tablespoon butter
  • 3 garlic cloves, very finely chopped
  • 3/4 cup cream
  • 1/2 teaspoon black pepper
  • 40 grams parmesan cheese, very finely grated
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh rosemary leaves (or any herb you like!)


Instructions

  1. Cook the Pasta: Boil your pasta in well-salted water until al dente. Reserve a cup of pasta water before draining; it can be used later to adjust the sauce consistency.
  2. Prepare Miso Mixture: In a small bowl or ramekin, mix the white miso paste with hot water to loosen it, making it easier to incorporate into the cream sauce. Set aside.
  3. Sauté Garlic: In a large skillet, melt the butter over medium heat, then add the finely chopped garlic. Let it gently sizzle for about a minute, ensuring the garlic doesn’t brown to keep the flavor delicate.
  4. Add Cream and Pepper: Pour in the cream and add black pepper. Bring to a very gentle simmer, lowering the heat so the sauce is just barely bubbling.
  5. Melt Parmesan: Gradually add the grated parmesan cheese in two to three additions, allowing it to melt fully into the cream before adding more. Stir well to combine.
  6. Incorporate Miso: Whisk the prepared miso mixture into the cream sauce, blending thoroughly for a smooth and flavorful base.
  7. Add Lemon Juice: Quickly whisk in the fresh lemon juice, and let the sauce gently thicken over a low simmer for one to two minutes, avoiding vigorous boiling.
  8. Toss Pasta in Sauce: Add the cooked pasta into the skillet with the sauce. Toss everything together and let it gently bubble for one to two minutes to marry the flavors. Use reserved pasta water to loosen the sauce if it’s too thick.
  9. Adjust Sauce Consistency: Since cream sauces thicken quickly off heat, ensure the sauce in the pan remains saucy before serving.
