Instructions
- Cook the pasta: Bring a large pot of salted water to a boil over medium-high heat. Add the penne pasta and cook until al dente, about 8-10 minutes according to package instructions. Reserve 1/2 cup of the hot pasta water in a bowl if you prefer to use it instead of chicken broth. Drain the pasta and set it aside.
- Prepare the chicken: Pat the chicken breasts dry with a paper towel. Season both sides evenly with salt and pepper to enhance flavor.
- Sear the chicken: Heat the vegetable oil in a large skillet over medium-high heat until hot and shimmering, about 1-2 minutes.
