Description

Delicious and healthy Cottage Cheese Cookie Dough that’s ready in just 5 minutes. This no-bake treat combines almond flour, protein powder, creamy whole milk cottage cheese, natural maple syrup, and vanilla bean paste, with dark chocolate chips folded in for a perfect balance of flavor and texture. Perfect for a quick snack or a guilt-free dessert, enjoy it straight away or chilled for a firmer bite.

Ingredients

Dry Ingredients

  • 1 ½ cup almond flour (plus more if needed)
  • ¼ cup protein powder

Wet Ingredients

  • 1 cup whole milk cottage cheese
  • 3 tablespoons maple syrup
  • 2 teaspoons vanilla bean paste

Add-ins

  • ½ cup dark chocolate chips

Instructions

  1. Mix dry ingredients: In a medium mixing bowl, whisk together the almond flour and protein powder until well combined to ensure even distribution.
  2. Blend wet ingredients: Add the cottage cheese, maple syrup, and vanilla bean paste to a blender and blend until the mixture becomes smooth and creamy, creating the perfect base.
  3. Combine wet and dry: Pour the cottage cheese mixture into the dry ingredients and stir until you achieve a dough-like consistency. If the dough is sticky, add a little more almond flour gradually to help it hold together well.
  4. Fold in chocolate chips: Gently fold in the dark chocolate chips evenly throughout the dough for sweet bursts of flavor.
  5. Form and chill: You can either enjoy the cookie dough immediately with a spoon, or use a 1.5 tablespoon spring-loaded cookie scoop to form 18 balls. Refrigerate for up to an hour if you prefer a firmer texture.

Notes

  • If the dough is too sticky, add additional almond flour by tablespoons until the desired consistency is reached.
  • Use full-fat or whole milk cottage cheese for the creamiest texture.
  • The cookie dough is best consumed within a day for optimal freshness.
  • Maple syrup can be substituted with honey or agave nectar if preferred.
  • For a vegan version, substitute cottage cheese with a plant-based alternative and ensure protein powder is vegan-friendly.
