Ingredients
Beef Patties
- 2 pounds 80/20 ground beef
- 3 teaspoons garlic powder, granules
- 2 teaspoons mustard powder
- 2 teaspoons kosher salt, plus more for seasoning
- 1 teaspoon freshly cracked black pepper, plus more for seasoning
- 6 cheddar cheese slices
Buns and Toppings
- 6 brioche or Hawaiian hamburger buns
- 6 Romaine lettuce leaves, torn into pieces
- 1 tomato, sliced
- Pickle slices (optional)
- 1 cup caramelized onions (optional)
Secret Sauce
- 1 cup mayonnaise
- 2 tablespoons ketchup
- ½ teaspoon garlic powder
- 2 tablespoons pickle juice
- 1 teaspoon dried dill
- 2 teaspoons fresh lime juice (from 1 lime)
- 1 teaspoon smoked paprika
- ½ teaspoon cayenne pepper
- 1 teaspoon stone ground mustard
Instructions
- Make the sauce. In a small bowl, whisk together the mayonnaise, ketchup, garlic powder, pickle juice, dried dill, fresh lime juice, smoked paprika, cayenne pepper, and stone ground mustard until well combined. Cover the bowl and refrigerate the sauce until ready to use to allow flavors to meld.
- Prepare the patties. In a large mixing bowl, combine the ground beef with 3 teaspoons garlic powder, 2 teaspoons mustard powder, 2 teaspoons kosher salt, and 1 teaspoon black pepper. Mix gently but thoroughly until all ingredients are evenly incorporated. Divide the mixture into six equal portions and shape each into a patty about ⅓ inch thick, ensuring even thickness for uniform cooking.
- Preheat the grill. Lightly oil the grill grates and preheat the grill to a high heat setting to get a good sear on the patties.
- Grill the patties. Season both sides of each patty with additional kosher salt and black pepper. Place the patties on the hot grill, then reduce heat to medium and cover. Cook for 5 minutes to develop a crust, then flip the patties and cook for another 3 to 5 minutes or until desired doneness is reached.
- Add cheese and toast buns. Place a slice of cheddar cheese on each patty during the last minute of grilling to melt. At the same time, add the hamburger buns cut side down to the grill, cover, and toast until the cheese is melted and buns are golden and crispy.
- Assemble the burgers. Spread a generous amount of the secret sauce on the toasted sides of both halves of each bun. Layer the bottom bun with lettuce, tomato slices, the cheesy beef patty, and caramelized onions if using. Top with the bun lid. Serve the burgers immediately with optional pickle slices on the side.
Notes
- For best flavor, use freshly cracked black pepper and freshly squeezed lime juice in the sauce.
- Caramelized onions are optional but add a sweet, savory depth.
- You can substitute ground beef with ground turkey or chicken, but cooking times may vary.
- Adjust cayenne pepper in the sauce to control heat level to your preference.
- Use brioche or Hawaiian buns for a slightly sweet contrast to the savory burger.
