  • 2/3 cup whole wheat pastry flour
  • 1/2 tbsp cinnamon
  • 1/2 tsp baking soda
  • pinch salt

Instructions

  1. Cream Wet Ingredients: In a large bowl or the bowl of a stand mixer, cream together the butter, brown sugar, honey, molasses, and vanilla bean paste until smooth and well combined.
  2. Add Dry Ingredients: Incorporate the all-purpose flour, whole wheat pastry flour, cinnamon, baking soda, and a pinch of salt into the wet mixture. Mix just until a thick dough forms, being careful not to overwork it.
  3. Chill Dough: Press the dough into a disc shape, wrap it tightly in plastic wrap, and chill in the refrigerator for one hour. For a quicker option, chill in the freezer for twenty minutes until firm.
  4. Prepare Baking Sheets and Oven: Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats to prevent sticking.
