Ingredients
Strawberry Yogurt Mixture

- Prepare the baking sheet: Line a large baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Mix strawberries with yogurt and vanilla: In a large bowl, combine the diced strawberries, plain Greek yogurt, and vanilla bean paste. Stir well until the berries are fully coated with the creamy yogurt mixture.
- Form clusters: Scoop about 2 tablespoons of the strawberry-yogurt mixture onto the parchment-lined baking sheet. Arrange the clusters with space in between. You should get approximately 8 clusters from the recipe.
- Freeze the clusters: Place the baking sheet in the freezer and let the clusters freeze for 30-45 minutes. They will become firm but remain easy to eat.
- Prepare chocolate coating: About 10 minutes before the clusters finish freezing, melt the semisweet chocolate chips with the coconut oil in a small microwave-safe bowl. Heat in 30-second increments, stirring between each, until the chocolate is smooth and glossy.
- Dip clusters in chocolate: Remove the frozen clusters from the freezer. Using a large spoon, quickly dip each cluster into the melted chocolate to coat it thoroughly, then place it back onto the parchment-lined baking sheet. Repeat until all clusters are coated.
- Set the chocolate shell: Allow the chocolate-coated clusters to sit at room temperature for a few minutes so the chocolate hardens into a crisp shell. Then, they are ready to enjoy!
