Ingredients

Strawberry Yogurt Mixture

  • 1 cup strawberries, diced (stems removed)
  • 1/2 cup plain Greek yogurt
  • 1 tsp vanilla bean paste

Chocolate Coating

  • 1 cup semisweet chocolate chips
  • 2 tsp coconut oil


Instructions

  1. Prepare the baking sheet: Line a large baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Mix strawberries with yogurt and vanilla: In a large bowl, combine the diced strawberries, plain Greek yogurt, and vanilla bean paste. Stir well until the berries are fully coated with the creamy yogurt mixture.
  3. Form clusters: Scoop about 2 tablespoons of the strawberry-yogurt mixture onto the parchment-lined baking sheet. Arrange the clusters with space in between. You should get approximately 8 clusters from the recipe.
  4. Freeze the clusters: Place the baking sheet in the freezer and let the clusters freeze for 30-45 minutes. They will become firm but remain easy to eat.
  5. Prepare chocolate coating: About 10 minutes before the clusters finish freezing, melt the semisweet chocolate chips with the coconut oil in a small microwave-safe bowl. Heat in 30-second increments, stirring between each, until the chocolate is smooth and glossy.
  6. Dip clusters in chocolate: Remove the frozen clusters from the freezer. Using a large spoon, quickly dip each cluster into the melted chocolate to coat it thoroughly, then place it back onto the parchment-lined baking sheet. Repeat until all clusters are coated.
