Ingredients

Chicken and Seasoning

  • 2 tbsp Avocado Oil (divided)
  • 8 oz Chicken Breasts or Chicken Thighs (boneless, trimmed of excess fat)
  • Salt & Pepper, to taste
  • 1/2 tsp Garlic Powder (divided)
  • 1 tsp Italian Seasoning

Vegetables

  • 1/2 medium Red Bell Pepper, thinly sliced
  • 1/2 medium Green Bell Pepper, thinly sliced
  • 1/2 large Onion, thinly sliced

Other

  • 4 slices Provolone Cheese
  • 2 Sausage Rolls


Instructions

  1. Season the chicken: Generously season the chicken breasts or thighs on all sides with salt, pepper, and 1/4 teaspoon of garlic powder. Allow the chicken to rest at room temperature while you prepare the vegetables.
  2. Prepare the vegetables: Thinly slice the red and green bell peppers and the onion. Set these aside for cooking.
  3. Cook the chicken: Heat 1 tablespoon of avocado oil in a large skillet over medium heat. Add the chicken and cook for 3 to 4 minutes on each side until fully cooked through. Remove the chicken from the skillet and transfer it to a cutting board; tent loosely with foil to keep warm.
  4. Sauté the vegetables: Add the remaining tablespoon of avocado oil to the skillet. Add the sliced peppers and onions along with the remaining 1/4 teaspoon garlic powder, Italian seasoning, and a pinch of salt and pepper. Increase the heat to medium-high and cook, stirring occasionally, until the vegetables are tender and slightly charred, about 6 to 8 minutes. Reduce the heat back to medium.
  5. Slice the chicken: Thinly slice the cooked chicken into strips, then stir the chicken back into the skillet with the sautéed vegetables until combined.
  6. Melt the cheese: Divide the chicken and vegetable mixture into two piles in the skillet, roughly shaped to fit the sausage rolls. Place 2 slices of provolone cheese on top of each pile and cover the skillet briefly to let the cheese melt over the mixture.
  7. Warm the rolls: Heat the sausage rolls in the microwave for about 20 seconds to make them warm and soft.
  8. Assemble the sandwiches: Spoon one pile of the cheesy chicken and vegetable mixture into each warmed sausage roll. Serve immediately while hot.

  • For best results, use boneless, skinless chicken thighs for more moisture or chicken breasts for a leaner option.
  • If you can’t find sausage rolls, substitute with hoagie rolls or any sturdy sandwich rolls.
  • You can add a bit of hot sauce or mustard inside the rolls for added flavor.
  • Make sure not to overcook the chicken to avoid dryness.
