Ingredients

Chicken Crust

  • 20 Ounces Canned Chicken (drained and rinsed well)
  • 1 Egg
  • 2/3 Cup Parmesan Cheese (grated)
  • 1 Teaspoon Garlic Powder
  • 1/2 Teaspoon Crushed Red Pepper Flakes

Dressing

  • 1 1/2 Cups Plain Greek Yogurt
  • 1 Lemon (juiced)
  • 1 Anchovy
  • 3 Cloves Garlic
  • 3/4 Cup Parmesan Cheese (grated)
  • 1/2 Teaspoon Ground Black Pepper

Toppings

  • 2 Heads Romaine Lettuce (washed and chopped)
  • Parmesan Cheese (grated, for garnish)
  • Ground Black Pepper (optional, for garnish)


Instructions

  1. Preheat Oven: Preheat your oven to 375°F to prepare for baking the chicken crust.
  2. Line Baking Sheet: Line a baking sheet with parchment paper and set it aside for the crust.
  3. Prepare Crust: Combine the canned chicken, egg, parmesan cheese, garlic powder, and crushed red pepper flakes in a food processor. Pulse until well combined into a consistent mixture.
  4. Shape Pizza Crust: Transfer the mixture to the lined baking sheet. Using clean hands, press it into a circular shape about 1/4 inch thick. If sticky, lightly oil your palms before shaping.
  5. Bake Pizza Crust: Place the shaped crust in the oven and bake for 40-45 minutes until the crust is golden brown and firm.
  6. Remove from Oven and Cool: Take the crust out of the oven and allow it to cool completely before adding toppings.
  7. Prepare Dressing: While the crust bakes, add the plain Greek yogurt, lemon juice, anchovy, garlic cloves, grated parmesan cheese, and ground black pepper to a blender. Blend until smooth and creamy.
  8. Wash and Chop Lettuce: Wash and chop the romaine lettuce, then place it in a large bowl along with some grated parmesan cheese.
  9. Toss Salad: Pour the prepared Caesar dressing over the lettuce and parmesan, then toss thoroughly to evenly coat the salad.
  10. Add Salad to Crust: Once the crust has cooled, pile the dressed Caesar salad evenly on top of the chicken crust.
