Description

A vibrant and fresh Cherry Tomato Salsa that’s quick to make and perfect for serving with chips, tacos, or grilled dishes. This easy no-cook recipe combines juicy cherry tomatoes with zesty lime, fragrant cilantro, and a hint of heat from jalapeño for a flavorful, healthy dip or topping.

Ingredients

Vegetables and Herbs

  • 3 cups cherry tomatoes (halved)
  • 1/2 cup red onion (roughly chopped)
  • 3 cloves garlic (minced)
  • 1 jalapeño pepper (seeded and roughly chopped)
  • 1/3 cup fresh cilantro leaves (chopped)

Seasonings and Liquids

  • 3 tablespoons lime juice
  • 1/2 teaspoon salt (plus more to taste)
  • 1/8 teaspoon ground black pepper

Instructions

  1. Combine Ingredients: In a bowl, mix the halved cherry tomatoes, roughly chopped red onion, minced garlic, seeded and chopped jalapeño, and chopped cilantro leaves together.
  2. Add Seasoning: Pour in the lime juice, then sprinkle the salt and ground black pepper over the mixture.
  3. Mix and Adjust: Stir all ingredients well to combine. Taste the salsa and adjust the seasoning with additional salt or pepper if desired.
  4. Serve or Rest: Serve the salsa immediately for a fresher, crunchier experience, or let it sit for about 10 minutes to allow the flavors to meld together for a more balanced taste.

Notes

  • This salsa is best served fresh but can be refrigerated for up to 2 days.
  • To reduce the heat, remove all seeds from the jalapeño or substitute with a mild pepper.
  • Add a pinch of sugar if the tomatoes are too acidic.
  • Great as a topping for grilled meats, tacos, or as a dip with tortilla chips.
