A comforting one-pot cheeseburger pasta recipe that combines browned beef mince, sautéed vegetables, and tangy condiments with pasta cooked in a rich beef stock. - 2 tsp Sunflower oil
- 500 g Beef mince (5% fat)
- 1 Onion (peeled and chopped)
- 2 Garlic cloves (peeled and crushed)
- 2 Green peppers (sliced)
- 750 ml Hot beef stock
- 6 tbsp Ketchup
- 3 tbsp Mustard (Yellow/American kind)
- 3 tsp Paprika
- 3 tbsp Worcester sauce
- 250 g Dried pasta
- 50 g Pickles (gherkin) (chopped)
- 100 g Cream cheese
- 75 g Red Leicester cheese (grated)
- Salt and freshly ground black pepper
Instructions
- Brown the beef mince: Heat the sunflower oil in a large saucepan or sauté pan over high heat. Add the beef mince and cook for 5-10 minutes, stirring frequently, until it is browned all over and cooked through.
- Sauté the vegetables: Add the chopped onion, crushed garlic, and sliced green peppers to the pan with the beef. Cook together for another 5 minutes until the vegetables soften.
- Add liquids and seasoning: Stir in 500 ml of the hot beef stock, ketchup, mustard, paprika, Worcester sauce, salt, and plenty of freshly ground black pepper. Add the dried pasta as well, then bring the mixture to a simmer.
- Simmer the pasta: Cover the pan with a lid and cook on a gentle simmer for 15-20 minutes, stirring occasionally, until the pasta is cooked al dente and the sauce has thickened to a rich consistency. Adjust seasoning if necessary.
- Preheat the grill: While the pasta finishes cooking, preheat your grill to high heat to prepare for melting the cheese topping.
- Add pickles and cream cheese: Turn off the heat under the pasta. Stir in the chopped pickles and cream cheese until well combined and creamy.
- Grill the cheese topping: Sprinkle the grated Red Leicester cheese evenly over the pasta. Place the pan or transfer the pasta to a grill-safe dish and put under the hot grill for 3-5 minutes, or until the cheese has melted and turned golden brown. Serve immediately.
Notes
- Be sure to use plenty of freshly ground black pepper to enhance the flavor.
- Keep an eye on the pasta as it simmers to avoid overcooking; the sauce should reduce and thicken nicely around the pasta.
- If you don’t have a grill, you can melt the cheese by placing the pan under a hot broiler or using a kitchen torch for a similar effect.
- For a leaner dish, use beef mince with lower fat content as suggested (5% fat).
