Ingredients

Cookie Base

  • 1 cup butter
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla bean paste
  • 2 large eggs
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups Butterfinger Bars (about 15 “fun size” bars, coarsely chopped)

Peanut Butter Frosting

  • 3/4 cup creamy peanut butter
  • 1/2 cup butter (softened)
  • 1/2 teaspoon vanilla bean paste
  • 1 1/2 cups powdered sugar
  • 1-2 Tablespoons milk
  • 1/2 cup chopped Butterfinger bits (about 4 “fun size” bars)


Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to ensure it’s ready for baking the cookie base.
  2. Cream Butter and Sugars: In a mixing bowl, combine 1 cup butter, light brown sugar, and granulated sugar. Cream them together until the mixture is smooth and light in color. Add the vanilla bean paste and eggs, then mix well to combine.
  3. Add Dry Ingredients and Candy: Gradually add the all-purpose flour, baking soda, and salt to the wet ingredients on low speed until just combined. Stir in the chopped Butterfinger candy pieces to distribute evenly.
  4. Prepare Baking Pan and Bake: Lightly grease a 9×13 inch baking pan. Smooth the cookie mixture evenly into the pan. Bake in the preheated oven for 24-26 minutes, or until the center is set and the surface no longer looks glossy.
