- 1 garlic clove, minced
- 1 tablespoon extra virgin olive oil
- 1-2 teaspoons balsamic vinegar
- Salt, to taste
Cheese Dip
- 8 oz feta cheese block, crumbled
- 1/2 block cream cheese (4 oz)
- 1/2 cup sour cream
- 1 garlic clove, minced
- 1 tablespoon lemon juice, freshly squeezed
- 1 tablespoon olive oil
- Salt, to taste
Toppings and Garnish
- More basil leaves, chopped
- Red pepper flakes, to taste
- Parmesan cheese, freshly grated
Instructions
- Prepare Tomatoes: Core and dice the Roma tomatoes into small cubes to create the base of the bruschetta topping.
- Mix Bruschetta Ingredients: In a medium bowl, combine diced tomatoes, chopped basil, minced garlic, extra virgin olive oil, balsamic vinegar, and salt. Toss everything gently to coat and allow the flavors to meld.
- Marinate Tomatoes: Set the tomato mixture aside to marinate for 10 minutes, enhancing the flavor and softening the tomatoes slightly.
- Prepare Cheese Mixture: While the tomatoes marinate, add the feta cheese, cream cheese, sour cream, minced garlic, lemon juice, olive oil, and salt to the bowl of a food processor.
- Process Cheese Dip: Puree the ingredients for 3-4 minutes, stopping occasionally to scrape down the sides, until the mixture is smooth and creamy.
- Assemble Dip: Scoop the creamy cheese mixture onto a shallow serving plate or bowl to form the base layer.
- Add Tomato Topping: Spoon the marinated tomato bruschetta mixture over the cheese dip evenly.
- Garnish: Sprinkle the top with red pepper flakes, freshly grated Parmesan cheese, and additional chopped basil leaves for color and flavor.
- Serve: Serve the bruschetta dip with an assortment of crackers, pita chips, or toasted bread slices for dipping.
Notes
- This dip is best served fresh but can be prepared up to 2 hours ahead; keep refrigerated until serving.
- Adjust balsamic vinegar quantity to taste depending on desired acidity and sweetness.
- For a spicier kick, increase the amount of red pepper flakes in the garnish.
- If you don’t have a food processor, you can vigorously mix the cheeses and other ingredients by hand, but the texture will be less smooth.
- This recipe is vegetarian-friendly but not vegan due to the cheese and sour cream.
