Description

A fresh and flavorful Bruschetta Dip that combines juicy tomatoes marinated in basil and balsamic vinegar with a creamy, tangy cheese blend made from feta, cream cheese, and sour cream. This easy no-cook appetizer is perfect for serving with crackers, pita chips, or toasted bread, making it a crowd-pleasing starter or party snack.

Ingredients

Tomato Bruschetta Mixture

  • 4 Roma tomatoes, cored and diced
  • 1/4 cup basil leaves, chopped
  • 1 garlic clove, minced
  • 1 tablespoon extra virgin olive oil
  • 1-2 teaspoons balsamic vinegar
  • Salt, to taste

Cheese Dip

  • 8 oz feta cheese block, crumbled
  • 1/2 block cream cheese (4 oz)
  • 1/2 cup sour cream
  • 1 garlic clove, minced
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 tablespoon olive oil
  • Salt, to taste

Toppings and Garnish

  • More basil leaves, chopped
  • Red pepper flakes, to taste
  • Parmesan cheese, freshly grated

Instructions

  1. Prepare Tomatoes: Core and dice the Roma tomatoes into small cubes to create the base of the bruschetta topping.
  2. Mix Bruschetta Ingredients: In a medium bowl, combine diced tomatoes, chopped basil, minced garlic, extra virgin olive oil, balsamic vinegar, and salt. Toss everything gently to coat and allow the flavors to meld.
  3. Marinate Tomatoes: Set the tomato mixture aside to marinate for 10 minutes, enhancing the flavor and softening the tomatoes slightly.
  4. Prepare Cheese Mixture: While the tomatoes marinate, add the feta cheese, cream cheese, sour cream, minced garlic, lemon juice, olive oil, and salt to the bowl of a food processor.
  5. Process Cheese Dip: Puree the ingredients for 3-4 minutes, stopping occasionally to scrape down the sides, until the mixture is smooth and creamy.
  6. Assemble Dip: Scoop the creamy cheese mixture onto a shallow serving plate or bowl to form the base layer.
  7. Add Tomato Topping: Spoon the marinated tomato bruschetta mixture over the cheese dip evenly.
  8. Garnish: Sprinkle the top with red pepper flakes, freshly grated Parmesan cheese, and additional chopped basil leaves for color and flavor.
  9. Serve: Serve the bruschetta dip with an assortment of crackers, pita chips, or toasted bread slices for dipping.

Notes

  • This dip is best served fresh but can be prepared up to 2 hours ahead; keep refrigerated until serving.
  • Adjust balsamic vinegar quantity to taste depending on desired acidity and sweetness.
  • For a spicier kick, increase the amount of red pepper flakes in the garnish.
  • If you don’t have a food processor, you can vigorously mix the cheeses and other ingredients by hand, but the texture will be less smooth.
  • This recipe is vegetarian-friendly but not vegan due to the cheese and sour cream.
