Ingredients
Beef Mixture

Roasted Sweet Potatoes
- 6 cups diced sweet potatoes (about 2 large potatoes), peeled and cut into 1/2-inch cubes

- 1 1/2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper

Instructions
- Make Rice: Begin by cooking white rice according to your preferred method or recipe. If desired, prepare cilantro-lime rice as an alternative. Set aside once cooked and keep warm.
- Prepare Sweet Potatoes: Preheat your oven to 425°F (220°C). Peel and dice the sweet potatoes into 1/2-inch cubes. Spread them evenly on a large baking sheet. Drizzle with olive oil, then sprinkle with paprika, garlic powder, salt, and pepper. Toss everything well to fully coat the sweet potatoes. Arrange them in a single layer and roast in the oven for about 30 minutes, flipping every 10 minutes, until they are tender and lightly browned.
- Cook Beef: While the sweet potatoes roast, heat 1 tablespoon olive oil in a large nonstick skillet over high heat. Add the diced onions and sauté for 3 to 5 minutes until they turn golden and fragrant. Push the onions to the edges of the pan and add the ground beef to the center. Sear and crumble the beef, cooking until it browns and most of the liquid has evaporated. Stir in the chicken broth or water, taco seasoning, tomato paste, and minced garlic. Cook for another 1 to 2 minutes until fragrant, then remove from heat. Optionally, stir in some well-drained black beans to warm through.
