Description

This Bang Bang Salmon Bowl is a vibrant and flavorful dish that combines perfectly seasoned and baked salmon chunks with a spicy-sweet mayo sauce, served alongside fresh veggies and rice. Ready in just 35 minutes, it’s a wholesome, colorful, and satisfying meal that brings a delightful fusion of textures and flavors to your table.

Ingredients

Salmon and Seasonings

  • 1 pound salmon fillets, cut into 1-inch cubes
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper

Sauce

  • 1/2 cup kewpie mayo (or regular mayonnaise)
  • 1/3 cup sweet chili sauce
  • 2 tablespoons sriracha
  • 1 tablespoon lime juice

Bowl Ingredients

  • 2 cups cooked rice
  • 1/2 cucumber, sliced into half moons
  • 1 avocado, diced
  • 1 cup shelled edamame
  • 3 green onions, sliced
  • 1 teaspoon sesame seeds
  • 1 teaspoon furikake seasoning (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to get it ready for baking the salmon.
  2. Season Salmon: In a large bowl, toss the cubed salmon with garlic powder, paprika, sea salt, and black pepper until evenly coated to infuse flavor.
  3. Make Sauce: In a separate bowl, whisk together the kewpie mayo, sweet chili sauce, sriracha, and lime juice until the sauce is smooth and well combined.
  4. Combine Salmon and Sauce: Add about half a cup of the prepared sauce to the salmon and toss gently to coat all the pieces. Reserve the remaining sauce to drizzle on later.
  5. Bake Salmon: Arrange the salmon cubes in a single layer on a parchment-lined baking sheet. Bake for 7 minutes, then remove from the oven, flip each piece carefully, and bake for another 7 minutes until cooked through and slightly caramelized.
  6. Assemble Bowls: Divide the cooked rice evenly among four bowls. Top each with baked salmon, cucumber slices, diced avocado, and shelled edamame.
  7. Finish and Serve: Sprinkle green onions, sesame seeds, and optional furikake seasoning over each bowl. Drizzle the remaining spicy mayo sauce on top before serving for a burst of flavor.

Notes

  • Use parchment paper for easy cleanup and to prevent sticking while baking.
  • Kewpie mayo offers a richer, slightly sweeter flavor; regular mayonnaise works as an alternative.
  • Furikake seasoning is optional but adds an authentic Japanese flavor and extra texture.
  • Adjust the spiciness by modifying the amount of sriracha to suit your taste.
  • Leftover sauce can be stored in the refrigerator for up to 3 days.
