Ingredients
Wet Ingredients
- 2/3 cup mashed banana
- 3 tbsp pure maple syrup (or honey)
- 2 tbsp oil (or water)
- 1/2 tsp pure vanilla flavoring (optional)
Dry Ingredients
- 1 cup flour (white, spelt, oat, or gluten-free all purpose flour)
- 1 tsp baking powder
- 1/4 tsp salt
Instructions
- Prepare wet ingredients: In a large bowl, whisk together the mashed banana, pure maple syrup (or honey), oil (or water), and vanilla flavoring if using, until fully combined.
- Preheat and grease: Preheat your oven to 350°F (175°C). Grease a donut pan or mini muffin tin thoroughly to prevent sticking.
- Combine dry ingredients: In a separate bowl, mix the flour, baking powder, and salt to distribute the leavening and salt evenly.
- Make the batter: Stir the dry ingredients into the wet mixture carefully until just combined, forming a smooth donut batter without overmixing.
- Fill the pan: Spoon the batter evenly into the greased donut pan or mini muffin tin, smoothing the tops with a spatula to ensure uniform baking.
- Bake the donuts: Place the pan in the oven and bake the donuts for about 8 minutes, or until they have risen and a toothpick inserted into the center comes out mostly clean.
- Cool and remove: Let the donuts cool in the pan for a few minutes before carefully popping them out. Allow them to cool completely on a wire rack.
- Optional icing: Once cooled, you may add your preferred icing or frosting, such as cinnamon cream cheese frosting, for an extra touch of sweetness.
Notes
- This recipe works well with white, spelt, oat, or gluten-free all-purpose flour. Almond or whole wheat flour have not been tested and are not recommended.
- You can substitute honey for maple syrup and water for oil depending on dietary preferences.
- Make sure not to overmix the batter to keep the donuts tender.
- If you don’t have a donut pan, a mini muffin tin is an excellent alternative.
- Donuts are best enjoyed fresh but can be stored in an airtight container for 1-2 days.
