Description
Apple Samoas are a healthy, no-bake snack that combines crisp apple slices topped with a creamy coconut and nut butter mixture, finished with a drizzle of rich chocolate. This easy recipe is perfect for a quick treat or dessert that’s both delicious and nutritious.
Ingredients
Fruit
- 1 apple (Honeycrisp or Pink Lady recommended)
Toppings
- ⅓ cup unsweetened shredded coconut
- 3 tablespoons almond butter or cashew butter (or seed butter of choice)
- ½ tablespoon maple syrup
- 2 tablespoons chocolate chips
- ½ teaspoon coconut oil
Instructions
- Prepare apple slices: Cut the apple into ¼-inch thick slices, removing the core. You should get about 3-4 slices per apple.
- Make coconut topping: In a bowl, mix together the unsweetened shredded coconut, almond or cashew butter, and maple syrup until fully combined and creamy.
- Top apple slices: Spoon and spread the coconut mixture evenly on top of each apple slice placed on parchment paper.
- Melt chocolate: In a small microwave-safe bowl or on the stovetop, melt the chocolate chips together with the coconut oil until smooth and combined.
- Drizzle chocolate: Drizzle the melted chocolate over each apple slice topped with the coconut mixture.
- Set in freezer: Place the prepared apple tots in the freezer for about 5-10 minutes until the chocolate is firm and set. Serve immediately and enjoy!
Notes
- Use your favorite variety of apple, preferably crisp and slightly tart like Honeycrisp or Pink Lady, for best flavor.
- Any nut or seed butter works well depending on your preference or dietary needs.
- You can substitute chocolate chips with dark chocolate to reduce sugar content.
- Keep the apple slices as fresh as possible by cutting just before serving to prevent browning.
- Store leftovers in the refrigerator for up to 2 days; chocolate may soften quickly at room temperature.
