These Apple Fritters are crispy on the outside, tender and fluffy inside, loaded with sweet cinnamon-spiced Fuji apples, and perfectly finished with a smooth vanilla-cinnamon glaze. A delightful treat perfect for breakfast, brunch, or dessert.
Ingredients
For the Fritters
- 3 to 4 cups canola oil
- 3 cups diced Fuji apples (peeled, cored, and diced – approx 3 large or 4 medium apples, 375 grams)
- 2 teaspoons fresh lemon juice
- 1 ½ cups all-purpose flour
- ⅓ cup granulated sugar (65 grams)
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- ¾ teaspoon ground cinnamon
- ½ cup whole milk (120 ml)
- 1 large egg (lightly beaten)
- 3 tablespoons unsalted butter (melted and slightly cooled, 45 grams)
- 1 teaspoon vanilla bean paste
For the Glaze
- 2 cups confectioners sugar (240 grams)
- 4 to 5 tablespoons milk or water (60 to 75 ml)
- 1 teaspoon vanilla bean paste
- ¼ teaspoon ground cinnamon
Instructions
- Heat the oil: Heat the canola oil in a large pot over medium-high heat until it reaches 375°F (190°C).
- Prepare apples: In a large bowl, combine the diced Fuji apples with fresh lemon juice to keep them fresh and set aside.
- Mix dry ingredients: In another large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon until evenly combined.
- Add wet ingredients: Make a well in the center of the dry ingredients and pour in the milk, beaten egg, melted butter, and vanilla bean paste. Mix gently until just combined, being careful not to overmix.
- Fold in apples: Gently fold the diced apples into the batter until mostly coated but still distinct.
- Prepare to fry: Grease a ¼ cup measuring cup or a large scoop with nonstick cooking spray. When the oil is hot, scoop ¼ cup of batter.
- Shape batter: Transfer the batter onto a metal spatula coated with nonstick spray and flatten it into a medium disc shape.
- Fry the fritters: Carefully lower the spatula with the batter into the hot oil, allowing the batter to slip off. Fry 3 to 4 fritters at a time to avoid overcrowding.
- Cook fritters: Fry each fritter for about 2 minutes per side, or until they are golden brown and cooked through. Remove and drain on paper towels.
- Make the glaze: While the fritters cool slightly, whisk together the confectioners sugar, milk or water, vanilla bean paste, and cinnamon until smooth. Adjust consistency as needed by adding more sugar to thicken or more milk to thin.
- Glaze fritters: Dip each cooled fritter into the glaze. For extra sweetness, dip again or drizzle the remaining glaze on top.

- Maintain the oil temperature at 375°F for crispy, non-greasy fritters.
- Use Fuji apples for a sweet and firm texture; other sweet, firm apples can be substituted.
